The hiss and steam of a pressure cooker discourages many cooks from this useful kitchen tool. Once mastered, pressure cooking opens up the world of tender meats, quickly cooked beans, and low-acid canning. 

Join Rachel Tayse of Harmonious Homestead to demystify pressure cooking and canning. Participants will become familiar with the types of cookers, practice cooking and canning dry beans, and taste a pressure cooked stew.

 

The DIY Basics series in 2017 includes Cultured Dairy, Waterbath Canning, Pressure Cooking and Canning, and Cultured Vegetables. Choose one or all to expand your home cooking and preserving knowledge.

-refine and adapt your teaching skills
-follow The Commissary practices for offering classes

Being confident with a knife in the kitchen is the difference that turns making dinner from chore to a joy. In this class we will discuss the hows and whys of good knife technique.

You'll get plenty of opportunities to chop, pare, julienne and dice as we make Fresh Pineapple Salsa. This quick and dirty ninety minutes of foundational skill building will pay huge dividends as you go on to cook for the rest of your life.

Feel free to bring your favorite knife to practice with, or use ours. 

Instructor Juli Carvi has worked as a professional baker and now serves as the Bexley City Schools Food Services Director. She writes the blog Egg Day to share her love of baking with others.

You want to support local farmers so you've signed up for a CSA or committed to shop farmers' markets. But what do you do with what you see? 

Rachel Tayse, urban farmer and seasonal eating expert at Harmonious Homestead, will help you learn to love what's local and fresh.

We'll start class with a CSA share and decode what's in the box. Rachel will identify each item, sharing how to store, prepare, and serve it. Then, we'll cook three courses together of basic recipes you can use throughout the autumn.

Farm Fresh Cooking is offered at the beginning of the spring and summer as a series to inspire and expand your ability to cook seasonally.

Refugee Supper Club: Colombia

An event we are excited to host with Columbus Food Adventures and CRIS (Community Refugee & Immigration Services):

"With 12% of our population born outside of the US and over 100 distinct languages spoken, the diversity of Columbus is something to be savored. If you agree, join us for a night of delicious South American flavors while raising funds for a most urgent cause - refugee resettlement. 

A recently resettled refugee family from Colombia will be preparing the food for the evening, including a lesson in the tradition of eating sancocho (a hearty stew served with toppings and rice). Empanadas and a rich postre de piña round out the meal. 

All proceeds from the evening will go to CRIS, the Community Refugee Immigration Services. CRIS has been providing resettlement and support services to Central Ohio refugee families for over 20 years, and their need for support from the community has never been greater. Please join us to do good while eating well."
