A wise man (and a talented chef) once told a much less confident me to stop downplaying my home kitchen experiments. "We are all just cooks and bakers" were his exact words. The Commissary is not just for the professionals but is a gathering and play space for all people with an interest in mixing, proofing, experimenting, gathering, and eating food.
I wrote about Dave Scarpetti a long time ago because I felt like every person needed to know that some of the best food in this town is not for sale; that some of the most exciting experiments were happening in our neighbors' homes. I want to cut and paste everything about that post because years later, every word is still true.
Over the last two years, Dave has generously opened his home to many food lovers. I know it sounds like a cliche to say it, but it is undeniable that rich friendships were formed while each nervous novice prepared heady breads under Dave's guidance.
Dave is going to move his baking classes into The Commissary for a few lucky backers of our Kickstarter campaign. This time he will guide anyone (no baking experience or Twitter account required) through the process of baking free form rustic white bread. The class will form, bake, and eat delicious breads but baking with Dave is never about creating a single loaf. Every participant will leave with the recipe, skills, tools, and dough required to recreate the experience and bread at home. (There will be plenty of Commissary swag as well.)
I hope you consider this class (and all of our other reward levels) because The Commissary is a place for the community to gather around food. All people.
