Matthew Heaggans has been making some of the most interesting food in Columbus. That is not just my opinion: Columbus Crave just named him one of the Tastemakers of 2014 and the Columbus Dispatch chose to highlight him to discuss some of the latest trends in food. Reviewers, diners, and food lovers in the know all agree that Chef Heaggans is doing something amazing in his food truck, Swoop!, and at his pop-up, Bebe at the Hey Hey.
What might not be common knowledge is that Chef Heaggans has a few more irons in the fire, like his restaurant project: Bebida. Bebida will be bringing a riff on the small plate menus to Columbus. This is not Spanish influenced tapas but tastes of food with ingredients and flavor combinations from around the world; New American tapas with chef-driven cocktails, craft beers, and wines to match.
The American tapas style works to Chef Heaggans' best advantage. He has built a following, in part, because of some seriously cravable bites of food. Social media was abuzz with tater tot love. Then, people were driven to his Swoop! truck for those brussel sprouts again and again. I was a sucker for the chicken fried mushrooms. And just when we would show up, for one more fix, they would be gone. A temporary vacation with a new bite of food in its place. Our disappointment quickly turned into enthusiasm.
When Bebe opened, the familiar food truck menu was nowhere to be found. Chef took the new venue as an opportunity to cook new foods but with the same consideration and playful nature. Matt Heaggans knows how to build trust with his diners and has used that to feed us what we didn't know we wanted to eat next.
The Commissary allows chefs like Heaggans to test out restaurant concepts and new menu items in a low risk, highly flexible space. These pop-up meals can be hosted in the planning stages of a new concept or as a showcase for potential investors and stakeholders.
For our Kickstarter supporters contributing at the Bebida level, Chef Heaggans will create a dynamic evening with an abundance of tapas and a well crafted beverage selection. There will be some of the familiar flavors that we have come to crave from the Swoop! and Bebe menus, but we can trust Chef Heaggans to impress our tastebuds with dishes that we have never had the pleasure of meeting before. I cannot think of a better way to experience Bebita than to taste all that Chef has to offer.
